Chef Sean's food is firmly inspired by his love for British cuisine. Local and British produce are at the centre of all his dishes and provenance once again plays a huge role in his menu. While offering refined versions of classics like 'Gillow Heath Mushrooms on Toast' and 'Steak and Chips'. Sean also uses influences from around the world to help create his other dishes like his Pigs Head Croquette'' and 'Three Wrens Buried Salmon'.
